Brazil nut blondies
When it comes to summery recipes I sometimes find myself in the vicious circle of thinking inside the box on the regular- ice-cream's, ice lollies and fruit filled bakes. There is absolutely nothing wrong with that and I will be making stuff like this over the next two/three months but I wanted to kick off the 'summery bakes' with something a little different and not necessarily summery; Brazil nut Blondies.
These blondies are all kinds of indulgent! Filled with white chocolate chunks and sweetened with Truvia they are seriously good! I have always been a little dubious of natural sweeteners as I could always taste them when I used them in any kind of baking. Then I realised that I was clearly using far too much to be able to taste it so I knuckled down and got my measurements just right and just like that, you don't get a weird chemically aftertaste.
1 1/2 Cups Plain Flour
1/2 Cup Truvia
3/4 Cup Coconut Oil (melted)
1 1/2 Cups Chopped Brazil Nuts
1 Cup White Chocolate Chunks
Pre-heat oven to 175 degrees C and grease/line a small brownie tin with either coconut oil or non-stick paper.
Beat coconut oil and sugar until forms a paste; add eggs one at a time and continue to beat.
Add vanilla and beat one last time.
Mix all dry ingredients in a bowl (including Brazil nuts and white chocolate chips) and pour into the wet mixed ingredients- stir well.
The mixture should be quite stiff now.
Pour into brownie tin and even out using a spatula or back of a spoon.
Bake for 20-25 minutes.
Remove and leave to cool completely before diving in!
