Plain and simple vegan vanilla biscuits {gf, df}


When it comes to Christmas baking I am not usually one to be 'all over it' like a lot of people are. I know, strange considering I'm a food blogger; but I don't usually get too caught up in the hype of Christmas. I think that's because, in the past, I worked in a nursery and anyone who works in childcare knows that they have to begin thinking about and preparing for Christmas in September. That usually means that by December I am well and truly over it. 
Not this year though! I have been well and truly free'd from the thought of Christmas until about mid-november which means, I am feeling it this year!! 
I might even put my tree up a couple of weeks before Christmas! Shock!

In true Christmas style I am kicking off my proper Christmassy bakes with some simple vanilla biscuit; in the shape of snowflakes of course!
Vegan, gluten and dairy free! Perfect for all my vegan, gluten and dairy intolerant followers out there :D. Did I mention there's only 5 ingredients in this recipe too?

(Makes 6-8 Biscuits)

2 1/2 Cups Plain Flour
1/2 Cup Coconut Oil (melted)
1/2 Cup Maple Syrup
2 Tsp. Vanilla
​Pinch Salt

method

Pre-heat oven to 175 degrees Celsius and line a baking tray with non-stick baking paper; pop to one side.
Mix all wet ingredients in a bowl until they are all mixed together.
Add flour and salt and mix until it forms a stiff dough-like mixture.
Roll into a ball, remove from the bowl and place on a piece of non-stick paper.
Place another piece of non-stick paper over top and use a rolling pin to roll the dough until it's about 2cm thick.
Using a cutter of your choice (I went for wintery snowflakes) simple cut into shapes and place on the baking tray.
Bake for 12-15 minutes or until they begin to golden.
Remove from the oven and leave to cool completely then decorate however you like!

Store in an airtight container for up to 7 days.
