vegan oaty gingerbread


Winter has definitely arrived and my goodness do we know it! Today is the first day I left the house and, although it's apparently 7 degrees, the cold juts went straight through all of my layers and I was instantly freezing. Talk about a shock to the system! Winter does mean one thing though, Christmas is coming and it isn't all that far away now! I know I've already mentioned it but, like every year, it's going to be here and gone before we know it. Anyone ready for it yet? 

In true Christmas style it would be silly not to throw together a delicious gingerbread recipe. Ginger is THE flavour of Christmas for me and what better way to include it than with a new gingerbread recipe?! Last Christmas I created a delicious gingerbread recipe for the lovely team at WheyBox and here I am again one whole year later doing the same thing but, with a twist.

The difference between this gingerbread recipe and last years recipe? Oh, well I'm glad you asked. Last year I created a very cake-like gingerbread; soft, moist and covered in a delicious ginger icing. This year I've gone more traditional; dense yet soft and with a sticky/tacky feel to it. Oh and the twist? It's vegan!

(Makes 10-12)

1 1/2 Cups Oat Flour
1 Cup Coconut Sugar
1/2 Cup Plain Flour
1 Scoop/Sachet Vegan Gingerbread Protein
2 Tbsp. Ginger
1 Tsp. Baking Powder
1/4 Tsp. Cinnamon
1/4 Tsp. All Spice.
3/4 Cups Coconut Yoghurt
1/2 Cup Almond Milk
2 Tbsp. Maple
2 Tsp. Vanilla Essence

method

Pre-heat oven to 170 degrees centigrade and line a medium baking tin with non-stick paper; pop to one side.
In a bowl mix all dry ingredients until well combined.
In a separate bowl mix all of the wet ingredients together, ensuring they are well mixed.
Slowly add the wet to the dry ingredients whilst mixing continuously throughout.
Bake for 20-25 minutes.
Remove from the oven and leave to cool completely before cutting and serving.

Store in an airtight container for up to 7 days.
